About The Chef and Owner
Alan Martin is the Chef and Owner of The Victoria Restaurant. He was born and raised in Anniston, AL and first worked at The Victoria when he was 21 years old. This was Alan’s initial introduction to the world of fine dining.
When Jacksonville State University and Jackson Hospitality approached Alan with the opportunity to own and operate the restaurant in The Victoria Inn, he knew this was the opportunity he had been waiting for.
Alan graduated with honors from the culinary arts program at the Art Institute of Atlanta in 1994. A year later, he moved to Birmingham and worked as Sous Chef at Highlands Bar and Grill and later at Bottega. He then started at Standard Bistro in 2003 and served there as the General Manager and Executive Chef until re-opening The Victoria Restaurant in October of 2009.
Alan’s menu features contemporary southern cuisine with a focus on products produced by local farmers and products that are native to the region. Alan’s menu allows him to create traditional southern dishes with a cutting – edge.
